OK, when a recipe diverges sufficiently from the original, I stick a new post out on it. Today’s victim is my pancake/waffle/crepe recipe. I have one on coconut sourdough and oatmeal sourdough. Oatmeal sourdough batter doesnt work well for crepes (because, oatmeal). And coconut is not always the way to go.
So here is a basic sourdough Crepes recipe for future reference. Not much to say, except seconds were requested by the whole family, so it means it is a keeper!
Recipe
1 cup (226g) Sourdough Starter (discard or ripe)
1 egg
1.5 tbsp melted butter
1 tsp vanilla extract
1 tsp cinnamon powder
2 tbsp Maple Syrup (or 1 tbsp sugar)
1/4-1/2 cup of whole milk per consistency (I recommend 1/2 cup so it is thin enough to roll)
Method
Whack all the ingredients into a blender, blend it well, and add milk to consistency requirements.
Stick it in the fridge for 1/2 hr to 1 hr.
Make it.
Eat it.
Profit??
